How To Make Prune Mui
Hawaiins love this dish. Every year, I make it as a holiday gift. You can use mason jars, canning jars, and plastic containers that are tight-fitting. Make it festive by adding a bow on top. Plus, it’s “only” delicious! Let’s start.
Ingredients
- 2 Juiced Lemons
- Brown Sugar, 1/4 Cup
- Red Li Hing Mui Powder (Dried), 1 Teaspoon
- Chinese 5 Spices, 1/2 Teaspoon
- Prunes (Dried), 1 Cup
- Apricots (Dried), 1/2 Cup
- Five Star Anise Cloves
- Whiskey, 3 Tablespoons
Instructions
Step 1
You’ll need three cups of water, one and a half cups of brown sugar, and the juice of one lemon to make simple syrup. Heat the water to a boil. For at least 48 hours, soak the Red Li Hing Mui in boiling liquid.
Step 2
After 48 hours, drain the liquid. You can eat the seed raw or add a portion to your prune mui later. If you do reintroduce the seed, you might find the mixture bitter.
Step 3
Add another cup of brown sugar to the liquid and reheat it in a saucepan. Bring it to a boil. Cook for 10-15 minutes at a simmer then reduce the heat. If it boils too much, you can add more water.
Step 4
Keep an eye on it to make sure you have enough to cover your dried fruit. When the prunes and apricots are still hot, pour the sauce over them. Let stand overnight.
Step 5
You can add dried fruits like nuts of your choice. You may also add a bit more Red Li Hing Mui powder at this point. Put the mixture in a dry, clean glass container. From there, you can serve and add fruit you want to enjoy with this snack.
