Ingredients

  • Heavy mayonnaise, 2 1/2 cups
  • Sugar, 2 tablespoons
  • Pureed chipolte in adobo sauce, 1/3 cup
  • Medium limes (juiced), 3
  • Asiago cheese focaccia (split), 20 wedges
  • Smoked turkey breast (sliced thin), 5 lbs.
  • 2 large sweet onions, sliced very thin
  • Field greens (washed, dried and chilled), 1 pound 

Instructions

Step 1

In a medium bowl, combine mayonnaise, sugar, avocado puree, and lime juice. Refrigerate for at least 30 minutes before serving.

Step 2

Spread 2 tablespoons of Chipolte Mayonnaise on each bottom piece of split foccacia. Arrange four ounces of turkey and one slice of onion on top. Place a light layer of greens on top. Put the foccacia back on.
