- Extra virgin olive oil, 2 tablespoons
- Button mushrooms, 10 oz
- Balsamic vinegar, 3 tablespoons
- Yellow onion (chopped), 1
- Garlic (pureed), 2 teaspoons
- Salt and pepper (to taste)
- Chicken breast, 1 lb
- Chicken stock, 1 ⁄2 quart
- Marsala wine, 2 -4 oz
- White wine, 2 oz
- Heavy cream, 1 ⁄2 quart
- Fresh basil (chopped), 1 tablespoon
- Parmesan cheese (grated), 2 tablespoons
- Garlic butter, 2 oz
- Parmesan cheese (for garnish)
- Fresh parsley (chopped)
Instructions
Step 1
Heat the oil in the pan. Saute onions until caramelized. Sauté the mushrooms in balsamic vinegar.
Step 2
Combine the onions with the mushrooms. Sprinkle salt and pepper over the mixture. Stir in the garlic, chicken stock, Marsala, and white wine. Cook until half reduced.
Step 3
Stir in cream and bring to a boil. Reduce heat and simmer to remove any impurities.
Step 4
Cook rigatoni until they are al dente. Stir drained rigatoni into chicken mixture in pan, then top with the basil-parsley mix, garlic butter, parmesan cheese, and salt and pepper.
