Ingredients

  • All-purpose flour, 7 cups

  • Instant yeast, 1 tbsp

  • Warm water, 2 3/4 cups
  • Neutral-flavored oil (like grapeseed, canola, vegetable, avocado, extra virgin olive oil, etc.), 1/4 cup
  • Salt, 2 tsp

Instructions

Step 1: 

Add 3 cups of all-purpose flour, 2 tsp of salt, 1/4 cups of sugar, and 1 tbsp of instant dry yeast to an electric stand mixer. 

Step 2: 

Add 2 3/4 cups of warm water and 1/4 cups of extra virgin olive oil. Combine well with the electric mixer. 

Step 3: 

For at least 10 minutes, cover the bowl with plastic wrap and let the batter sit. You may notice that the mixture is bubbling. 

Step 4: 

As the mixture is running, add the remaining 4 cups of all-purpose flour in three or four batches. Continue mixing until the dough comes together finely and completely. 

Step 5: 

For about another 2 minutes, knead the dough until it becomes smooth and light.

Grease a large bowl and transfer the dough into it.
