- 3 large Russet potatoes (washed)
- Vegetable oil (for frying)

- ½ teaspoon oregano (Dried)

- Prepare the potatoes by slicing them into 1/2 inch thick sticks. Cut them evenly using a French fry cutter.
- Allow the potato sticks to soak in iced water for at least 1 hour or overnight if possible. The starch will be removed and the French fries will become extra crispy.
- Rinse the fries 2-3 times with cold water and transfer to a plate lined with paper towels; pat dry and set aside.
- Combine the smoked paprika, garlic powder, cayenne pepper, dried oregano, salt, and garlic powder in a small bowl. Place aside.
- In a large pot or deep fryer, heat oil to 300°F (150°). Drop potatoes into the hot oil with a slotted spoon. Fry them in batches for 4-5 minutes. Place them on paper towels to drain. Continue with the remaining fries.
- Increase the heat to 400 F and fry each batch a second time or until golden brown, about 3-4 minutes.
