How To Make Pf Chang’s Wonton Soup

Ingredients
FOR THE SOUP
- 2 chicken breasts (cubed)
- 1 pound small to medium shrimp (deveined with tails off)
- 1 cup fresh spinach (torn into small pieces)
- 1 cup mushroom (sliced)
- 1 (8 oz) can water chestnuts
- 1 teaspoon light brown sugar
- 1 tablespoon rice wine
- 1 tablespoon soy sauce
- 1 teaspoon scallion (finely chopped)
- 1 teaspoon fresh ginger (finely chopped)
- 6 cups chicken stock
FOR THE WONTONS
- 24 wonton wrappers
- 6 oz ground pork
- 8 medium shrimp (shelled and ground)
- 1 teaspoon light brown sugar
- 1 tablespoon rice wine
- 1 tablespoon soy sauce
- 1 teaspoon scallion (finely chopped)
- 1 teaspoon fresh ginger (finely chopped)
Instructions
FOR THE SOUP
Step 1
Stir together all the ingredients after bringing chicken stock to a rolling boil.
Step 2
Cook the shrimp and chicken for 10 minutes or until they are cooked through.
FOR THE WONTONS
Step 1
Combine the pork, ground shrimp, brown sugar, rice wine or sherry, soy sauce, scallions, and chopped ginger in a bowl.
Step 2
Blend well and allow to sit for 25-30 minutes. Fill each wonton wrapper with 1 tsp of the filling.
Step 3
To seal each wonton, wet the edges with a little water and press them together with your fingers. Fold each wonton over.
Step 4
Add the wontons to the boiling chicken stock and cook for 4-5 minutes. Remove from the heat and serve in individual bowls.
