Cakes are synonymous with the celebrations and also come together for happy times. So I also decided to bake a cake on a very special day of my life and share a recipe with you. 

Would you like to have an amazing recipe for the lemon cake that also inspires you to be a creative chef? Well, this is not an ordinary lemon cake, particularly for me. Because my mom used to bake it for me on my special days. If you are on diet and you are having sweet cravings, this cake is a perfect treat for you. Due to the presence of lemon, it will boost up the metabolism causing less or no effect on your diet. 

Although I have so many more cake recipes, I often like this old classic recipe of Jamie Oliver’s Lemon Yogurt Cake.  My kids anxiously wait for me to end up stirring the batter as they love to lick the leftover batter from the bowl. Today is my mom’s birthday and  I decided to make the same Lemon Yogurt Cake Jamie Oliver to surprise my mom.  My mom used to add Vanilla essence but I replaced it with eggs to make the cake more nutritious. Let’s grab ingredients and give this yummy cake to your family as a treat. 

Ingredients

  • Maida or All purpose flour about 180 grams
  • 2 tsp of baking powder
  • ½ tsp of salt
  • 200g of sugar
  • 3 eggs
  • Plain yogurt 120 ml
  • Lemon zest took from 1 medium-sized lemon
  • 120 ml oil
  • ¾ cup of Icing Sugar/ Confectioners sugar (For Lemon Glaze)

Step by Step Baking of  Lemon Yogurt Cake Jamie Oliver

Step 01:

Preheat your oven to around 180 degrees celsius.

Step 02:

Take a round pan of 8 inches and grease it with oil. Afterward, sprinkle flour (maida) over it. Coat it on all of the sides and then tap off the excess.

Step 03:

Now take the baking powder, flour, and salt in a bowl. Mix all of them until combined and then set them aside.

Step 04:

Take eggs, lemon zest, sugar, oil, and yogurt in a bowl and mix it well.  Add flour in the bowl gently and do not over mix the ingredients. 

Step 05:

Spoon this mixture into a baking pan and bake it in the oven for about 30 to 40 minutes.  Take a toothpick and insert it to check if your cake is done or not. 

Step 06:

Now remove the cake from the oven and let your cake cool in the tin for almost 10 minutes.  Now ease the sides of the cake and then invert it. Cool your cake down.

Step 07:

When your cake is cooling, you can make your icing by mixing up lemon juice and icing sugar. Now pour this icing mixture over the warm cake and your yummy cake is ready.
