This dish is very simple yet an ideal Asian side dish. With the aroma of garlic, Din Tai Fung green beans are snappy and full of umami flavor to give you a unique taste. 

How to Make Din Tai Fung Green Beans at Home?

Din Tai Fung green beans are an easy recipe and can be made at home. Not many ingredients are required and the good thing is that all the ingredients are easily available in the grocery store. The main difference between ordinary green bean side dishes and Din Tai Fung ones is that simple green bean dishes have crunchy and crispy green beans while in Din Tai Fung beans, the skin of the beans is a bit wrinkled. So let’s try making this delicious and blistering recipe.

Ingredients

  • Green beans = 230 g (1 cup)
  • Chicken powder = to taste
  • Garlic = 5 cloves
  • Salt = to taste
  • Chili flakes = 2 tbsp
  • Vegetable oil = for frying

Method

Preparation of Ingredients

  1. Take 5 garlic cloves.
  2. Peel the cloves and wash them.
  3. After drying, mince the cloves properly.
  4. Now take the green beans.
  5. Trim the ends of the beans from both sides.
  6. Wash them with clean water and then let them dry or dry them with a kitchen towel.

Frying 

  1. Take a medium-sized pot.
  2. Add some neutral oil to it.
  3. Heat the oil and while heating, divide the green beans into a feasible amount of batches.
  4. When the oil is heated, add a batch of green beans to it.
  5. The beans will splatter. Be careful!
  6. Also, add chili flakes and salt to taste.
  7. Meanwhile, take a tray or a large dish and cover its surface with some paper towels.
  8. After frying for 20-30 seconds, take out the beans to the paper towel dish.
  9. Let the paper towel absorb extra oil.
  10. Heat the oil again and repeat the same procedure for the remaining batches of green beans.

Making Garlic Oil

  1. Take about 1 tbsp of leftover oil from green bean frying.
  2. Take a new pan and add oil to it.
  3.  Then add minced garlic to the oil.
  4. Add salt, black pepper, and chicken or mushroom powder a pinch each.
  5. Cook on a low flame.
  6. Turn off the flame when you feel like the aroma of garlic has been released in the oil.

Assembly

  1. Take a large bowl.
  2. Add the dry-fried green beans to it.
  3. Then add the garlic oil along with the hints of cooked garlic in the bowl.
  4. Add salt according to your taste.
  5. Toss the ingredients well so that they are properly mixed and the oil is evenly coated on the beans.
  6. Din Tai Fung green beans are ready to serve. You can pair them with fluffy jasmine rice or steak. Bon appetit! 

Chef Tips

  • To make sure of the characteristic wrinkles on the beans, fry them in batches and do not overcrowd them in the pan.
  • To add some more spice, you can add peppercorns or red chili flakes.
  • Chicken powder or chicken paste, both work well.
  • To try another different taste, you can try the same recipe with bok choy.
  • If you do not like chili, you can omit chili flakes and chili oil.
  • You can also use unsalted butter in place of neutral oil.
  • Do not skip the blanching step. It makes the beans appear more vibrant.

Frozen Green Beans Big No!

Unfortunately, you can not use the beans from the freezer. The reason is that when the ice melts, it renders the beans soft. So when you fry them, instead of becoming snappy, they end up being soggy.

Storage

If you have leftover green beans, you can store them in the refrigerator. They stay good for 4 days before going stale. But do not forget that with time, they also lose their crispiness and get softer.
