Ingredients

  • Chicken Breast (Boneless and Skinless), 4
  • Dried Herbs ( Thyme, Oregano, Basil,Rosemary), 1-½ easpoons 
  • Garlic Powder, 1/2 Teaspoon
  • Salt (to Taste)
  • Freshly Ground Black Pepper (to Taste)
  • Olive Oil, 1 Tablespoon
  • Mushrooms (Sliced), 8 Ounces
  • Chicken Broth (Low-Sodium), 1 Cup
  • Dijon Mustard, 2 Tablespoons
  • Honey, 2 Teaspoons

Instructions

Step 1

Prepare the chicken by pounding it to a thickness of 3/4 inch. Add the dried herbs, garlic powder, salt, and pepper to the chicken.

Step 2

Make sure the chicken pieces are well coated with the seasoning by rubbing them. It will add flavor and seasoning to the mustard mushroom chicken dish.

Step 3

Over medium-high heat, cook chicken for about 5 minutes per side until it reaches 165°F. Lower the heat if the chicken browns too quickly.

Step 4

Cover the skillet with a towel to keep the chicken warm. Continue to cook the mushrooms in the same skillet, turning them frequently, until softened. 

Step 5

Bring the chicken broth, Dijon mustard, and honey to a boil in the skillet; simmer for one to two minutes, stirring constantly, until sauce has reduced by half and has thickened a bit.

Step 6

You can serve the Dijon chicken and mushrooms with wilted spinach and rice, if desired.
