For The Dough:
- Glutinous rice flour, 2 cups
- Sweetened flaked coconut, 2 cups
- Coconut milk, 1 1/2 cups
- Baking powder, 1 teaspoon
- Vegetable oil (for frying)
For The Glaze:
- Brown sugar, 1 cup
- Coconut milk, 1/3 cup
Instructions
Step 1
Combine all the ingredients for Dough in a large bowl and mix well. After it forms a dough, form it into small balls about the same size as fish balls, then set them aside.
Step 2
In a wok, heat enough oil for deep-frying and drop the shaped dough pieces one by one, deep-frying until golden brown in colour.
Step 3
Remove the balls from the wok, set them aside and allow them to drain on a wire rack.
Step 4
Mix all glaze ingredients in a saucepan, then cook over medium heat until sauce thickens.
Step 5
Pour the glaze over the Karioka balls to coat them. Put them on skewers, and serve while hot.
