Ingredients
- Pineapple juice, 1 cup
- brown sugar (Packed), 1/2 cup
- Soy sauce, 1/2 cup
- Hoisin sauce, 1/2 cup
- Garlic (minced), 1 tablespoon
- Ginger (minced), 1/2 tablespoon
- Chicken thighs (boneless and skinless), 2 pounds
- 1 yellow bell pepper (cut into 1 inch chunks)
- 1 green bell pepper (cut into 1 inch chunks)
- 1 red bell pepper (cut into 1 inch chunks)
- Orange juice, 1/4 cup
- Cornstarch, 1/4 cup
- Rice (Cooked)
- Green onions (for garnish)
- Sesame seeds (for garnish)
- Red pepper flakes (for garnish)
Instructions
Step 1
Prep the 6-quart crockpot by spraying it with cooking spray.
Step 2
Mix pineapple juice, brown sugar, soy sauce, hoisin sauce, garlic, and ginger in a medium bowl.
Step 3
Pour half of the sauce into the crockpot, then top it with the chicken thighs and peppers, and add the remaining sauce.
Step 4
Cover the pot and cook for 7-8 hours on low or 3-4 hours on high. When the chicken is done, remove it from the pot and set it aside.
Step 5
Stir the orange juice and cornstarch together until smooth in a small bowl, then gradually stir the mixture into the sauce.
Step 6
Cut the chicken into chunks and add to the crockpot. Continue cooking on high heat for another 30 minutes.
