How to make a Quiche Muffins
The quiche muffins recipe has been a favorite of mine for a while. These muffins have a wonderful creamy eggy deliciousness which can be served warm with a scoop of vanilla yogurt or served cold with fresh strawberries and a dollop of ice cream.
Ingredients
- Eggs, 12 (lightly beaten)
- Milk, 1 cup
- Freshly ground black pepper and salt
- Pie crusts thawed, 2 (homemade or store-bought)
- Cooked ham diced, 8 ounces (about 1 cup)
- Shredded cheddar cheese, 8 ounces (about 2 cups)
- Scallions, 2 (Thinly sliced)
Instructions
Step 1
Preheat the oven to 375 degrees. Spray two muffin tins with nonstick spray. Whisk together egg yolks, milk, 1/2 teaspoons salt, and 1/4 teaspoons pepper in a large bowl.
Step 2
Pie crusts should be unrolled. Cut 12 rounds per crust with a 3-inch round cutter (you may need to reroll the pie crust to get all the rounds). Put into prepared muffin tins.
Step 3
Each muffin should have one tablespoon of ham and cheese. Distribute scallions evenly among all muffins. Pour egg mixture evenly over all 24 cups, filling to within 1/4 inches of the top.
Step 4
Cook at 375°F or until golden brown, about 25 to 30 minutes (remove a few to ensure that the bottom crust is completely cooked). Let cool slightly and serve warm.
