Ingredients
- Black beans, 1 can (rinsed & drained)
- Extra virgin olive oil, 2 Tbsp
- Onion diced, 1 small
- Jalapeno, 1 (diced)
- Garlic cloves, 2 (minced)
- Chicken or vegetable broth, 1 cup
- Cilantro chopped, 1/4 cup
- Cumin, 1 tsp.
- Chili powder,1 tsp.
- Salt to taste
Instructions
Step 1
Over medium heat, warm olive oil in a medium saucepan. Saute onion and jalapeno for about 5 minutes until tender. Add the garlic and sauté for an additional minute.
Step 2
Add 1/2 cup broth and black beans. Bring to a simmer, stirring frequently. Simmer until most of the broth is absorbed. If necessary, add another 1/2 cup broth. Add the cilantro and seasonings and heat through.
Step 3
Puree until desired consistency is achieved with an immersion blender or blender.
Step 4
Serve warm with tortilla chips and queso fresco cheese.
