Turkey Filling
- 1 lb ground turkey 93% lean
- 1 tbsp sesame oil
- 1 tbsp vegetable oil
- 3 garlic cloves, minced
- 1 tsp fresh ginger, grated
- 3 tbsp hoisin sauce
- 2 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tsp chili garlic sauce or sriracha adjust to taste
- 1 can (8 oz) water chestnuts, drained and diced
- 3 green onions, sliced
For Serving
- 1 head butter lettuce or iceberg lettuce leaves separated
- 1/4 cup matchstick carrots
- 2 tbsp sesame seeds
- 2 tbsp fresh cilantro
- 1 lime, cut into wedges

In a small bowl, mix together hoisin sauce, soy sauce, rice vinegar, and chili garlic sauce. Set aside.
Heat vegetable oil and sesame oil in a large skillet over medium-high heat. Add garlic and ginger; cook 30 seconds until fragrant.
Add ground turkey and cook, breaking into crumbles, for 6-8 minutes until cooked through and no longer pink.
Drain any excess fat. Pour the hoisin sauce mixture over the turkey and stir to coat.
Stir in water chestnuts and cook 2 more minutes. Remove from heat and fold in green onions.
Arrange lettuce leaves on a platter. Spoon turkey mixture into cups. Top with carrots, sesame seeds, and cilantro. Serve with lime wedges.
