Ingredients
- 1/3 cup sugar
- 1/3 cup kosher salt
- 1 bay leaf
- 1 teaspoon red pepper flakes
- 1 orange peel
- 4 lbs of chicken wings
- 2 cups of flour.
- 1/4 cup cornmeal
- 1/4th cup crushed potato chips
- 2 teaspoons garlic powder
- 1 teaspoon cayenne
- 1/2 teaspoon of baking powder
- 2 teaspoons of black pepper
- 2 teaspoons salt
- 2 cups buttermilk
- 1 quart canola oil
Step 1
Pour 5 cups of water into a large pot. Bring the pot to a boil over high heat. Add the sugar, red pepper flakes, salt, bay leaf, and orange peel. Stir for about a minute, until the sugar and salt are dissolved.

Take off the heat and let cool. Put the chicken in a bowl and cover it with brine. Refrigerate for 10 to 12 hours, and for up to 24 hours.
