How To Make Jalapeno Peanut Brittle
Peanut brittle is a classic dessert that I could eat every single day, and it’s something that’s very hard to find in the US. This recipe is one of my favorites because it’s super quick and doesn’t use any crazy ingredients. The ingredients are simple, you can make it in under 5 minutes, there’s no baking involved, it doesn’t use oil or butter, and it’s definitely delicious!
Ingredients
- Jalapeno (chopped), 1 -2
- Water, 1⁄3 cup
- Sugar, 2 cups
- Light corn syrup, 1 cup
- Peanuts, 3 cups
- Salt, 1 teaspoon
- Butter, 2 teaspoons
- Baking soda, 2 teaspoons
Instructions
Step 1
Put jalapeno and water into a glass measuring cup, and microwave for 5 minutes. Allow to stand for 15 minutes. Discard the jalapenos and reserve liquid.
Step 2
Mix sugar, jalapeno liquid and syrup well in a large non-stick saucepan. Over medium heat, stir until candy thermometer reaches 240 degrees, then add peanuts.
Step 3
Stir constantly until candy reaches 298 degrees, remove from heat, and add salt, butter, and baking soda, stirring well to combine.
Step 4
Let cool completely and then break into bite-size pieces on a well buttered non-stick baking sheet. Enjoy!
