How To Make Half Runner Green Beans

Ingredients
- Extra virgin olive oil, 1 tablespoon
- Red medium onion (finely diced), ½ cup
- 1 ham hock
- Garlic cloves (finely minced), 2 tablespoon
- Green beans (trimmed and snapped in half), 1 1/2 pounds
- Chicken broth, 1 cup
- Lukewarm water, 2 cups
- New potatoes (quartered), 1 pound
- Additional ham (chopped), 1 cup
- Kosher salt (to taste)
- Freshly ground black pepper (to taste)
Instructions
Step 1
Over medium heat, pour one tablespoon of extra virgin olive oil into a dutch oven. In the absence of EVOO (Extra Virgin Olive Oil), you can use any type of seed oil.
Step 2
Stir in finely chopped onion and minced garlic when the oil is hot enough. Cook for 5 minutes until the onions are translucent.
Step 3
Combine green beans and 1 ham hock with the garlic onion mixture.
Step 4
Add 2 cups of lukewarm water to 1 cup of chicken broth. Less water may be needed. Make sure the beans are completely covered with water and broth.
Step 5
Once the mixture has boiled, reduce the heat to a simmer. Put a lid on the Dutch oven and let it cook for 40 minutes or until the liquid mixture turns a deep brownish green color and the beans are well seasoned.
Step 6
During simmering, add 1 pound of quartered-cut potatoes and another 1 cup of chopped ham.
Step 7
Place back into the Dutch oven once again, after removing from heat and discarding the ham hock and bone.
