The Salad That Makes You Actually Crave Fall

There is a very specific moment every September when the air shifts — that first cool, crisp morning that smells faintly of leaves and wood smoke — and suddenly every craving I have pivots hard toward earthy, warming, deeply nourishing food. That is the moment this lighter autumn harvest salad was made for. It is the kind of bowl that feels like a celebration of the season: jewel-toned, texturally layered, and built entirely from ingredients that are at their nutritional and flavour peak right now. No wilted greens, no sad desk salad energy. This one is bold, satisfying, and genuinely beautiful on the table.

The combination here is deliberate and deeply considered. Massaged lacinato kale forms the hearty, nutrient-dense base — and yes, massaging the kale is a non-negotiable step that transforms it from tough and bitter to silky and almost sweet. Roasted butternut squash brings caramelised sweetness and a gorgeous golden colour. Chewy, nutty farro adds whole-grain substance that keeps you full for hours. Crisp apple slices offer brightness and a fresh crunch, and jewel-like pomegranate arils burst with tart juice in every bite. Lacing it all together is a maple-dijon vinaigrette that manages to be tangy, slightly sweet, and completely addictive — all at once. This is fall eating at its absolute finest, and it comes with a genuinely impressive nutritional résumé to match.

What I love most about this recipe is that it works beautifully as both a main dish and a side. Pack it for lunch, bring it to a Friendsgiving table, or serve it alongside your favourite protein on a weeknight. The farro holds up beautifully even after dressing, so leftovers the next day are just as wonderful as fresh. If you are looking for more nourishing fall recipes to build into your week, our Lighter Apple Cider Chicken Skillet pairs perfectly alongside this salad for a complete autumn dinner that feels anything but ordinary.

Why You’ll Love This Recipe

  • Deeply nourishing and genuinely filling. Between the fibre-rich kale, whole-grain farro, and healthy fats from the vinaigrette, this salad keeps you satisfied — no 2pm energy crash.
  • Meal-prep friendly. Roast the squash, cook the farro, and make the dressing in advance. Assembly takes minutes.
  • Stunning presentation with zero effort. Pomegranate arils and golden squash do all the visual heavy lifting for you.
  • Naturally plant-based and easily customisable. It’s vegan as written, but plays beautifully with grilled chicken, seared salmon, or crispy chickpeas if you want added protein.
  • The maple-dijon vinaigrette is truly next-level. Balanced, bright, and ready in under two minutes with pantry staples you already own.
  • Seasonal ingredients at their nutritional peak. Butternut squash, kale, apple, and pomegranate are powerhouse fall superfoods and they shine here.

Key Ingredients and Why They Matter

Lacinato kale (also called Tuscan or dinosaur kale) is the backbone of this bowl. It is heartier and less bitter than curly kale, and when you massage it with a little olive oil and salt, the cell walls break down, releasing a surprisingly sweet, almost creamy texture that holds up beautifully to the warm squash and heavy dressing. Kale is also one of the most nutrient-dense leafy greens on the planet — loaded with vitamins K, A, and C, plus calcium and antioxidants. Butternut squash, roasted until the edges are caramelised and deeply golden, brings natural sweetness and beta-carotene — a powerful antioxidant your body converts to vitamin A. Farro is an ancient whole grain with a wonderfully chewy bite and a nutty, almost earthy flavour. It is notably high in protein and fibre for a grain, making it one of the smartest choices you can make for a filling salad base. Serious Eats has a fantastic deep-dive on cooking farro perfectly if you want to go beyond the basics. Pomegranate arils are the seasonal superstar here — they deliver a pop of tart juice, a satisfying crunch, and a significant dose of polyphenol antioxidants with every single bite. Finally, the maple-dijon vinaigrette ties everything together with pure maple syrup (a far less processed sweetener than refined sugar), sharp dijon, apple cider vinegar, and extra-virgin olive oil. It is a dressing that feels indulgent but is made entirely of clean, whole ingredients.

Pro Tips & Variations

Don’t skip the massage. Seriously — spend 60 to 90 seconds really working the kale with your fingertips. You will feel it soften and darken as the olive oil and salt do their job. This single step is what separates a tough, forgettable kale salad from one people ask you for the recipe on the spot.

Roast your squash at high heat. 425°F (220°C) is the sweet spot. You want caramelisation and golden edges, not steamed, mushy cubes. Spread the squash in a single layer with plenty of space — crowding the pan is the enemy of roasting. Cook farro in broth instead of water. A simple swap that adds depth of flavour with minimal effort. Vegetable broth works perfectly and keeps this dish fully plant-based.

Add protein to make it a full main. Grilled or roasted chicken, seared salmon, or a generous handful of crispy chickpeas all work beautifully here. The salad is hearty enough to anchor a meal all on its own, but the option is there when you want extra staying power.

Swap the apple variety. Honeycrisp is our top pick for maximum crunch and sweetness, but Pink Lady, Fuji, or Braeburn all work well. Avoid Gala or Red Delicious — they tend to go mealy quickly once sliced.

Make the dressing ahead. The maple-dijon vinaigrette keeps in a sealed jar in the refrigerator for up to a week. Shake well before using. It also doubles as a gorgeous dipping sauce for roasted vegetables or a sandwich spread.

Cheese options. A crumble of goat cheese or shaved pecorino adds a creamy, salty counterpoint that is absolutely worth it. Keep it optional for a fully vegan bowl or lean into it for a more indulgent finish.

Toasted pepitas or walnuts make an excellent addition for extra crunch, healthy fats, and a little more staying power. If you love adding crunchy seeds to your fall cooking, our Air Fryer Pumpkin Seeds are a crispy, no-oil topping that fits perfectly here.

Grain alternatives. Not a farro household? Cooked quinoa, wild rice, or even freekeh all work as substitutes and keep the same hearty, whole-grain integrity.

A Few Words on the Nutritional Wins Here

This lighter autumn harvest salad is a genuinely impressive nutritional package dressed up as something indulgent. The kale and pomegranate deliver a serious antioxidant punch, while butternut squash provides beta-carotene, vitamin C, potassium, and fibre. Farro contributes complex carbohydrates, plant-based protein, and magnesium — all of which support sustained energy and muscle function. The maple-dijon dressing uses extra-virgin olive oil as its fat base, which is rich in heart-healthy monounsaturated fats and polyphenols. Bon Appétit has written beautifully about building genuinely nutritious salads, and this bowl checks every box they highlight. At approximately 390 calories per serving, this salad delivers exceptional nutrient density — meaning you get an enormous return in vitamins, minerals, and fibre for every single calorie. It is the definition of eating well without deprivation.

Equipment

  • Large sheet pan
  • Large mixing bowl
  • Medium saucepan
  • Small jar or bowl for dressing
  • Sharp chef's knife
  • Cutting board

Ingredients

For the Salad

  • 1 small butternut squash about 3 cups peeled and cut into 3/4-inch cubes
  • 2 tbsp extra-virgin olive oil divided
  • 1/2 tsp kosher salt plus more to taste
  • 1/4 tsp black pepper freshly ground
  • 1/4 tsp smoked paprika
  • 1 cup dry farro
  • 2 cups vegetable broth or water
  • 1 large bunch lacinato (Tuscan) kale stems removed, leaves torn or sliced into ribbons — about 6 cups packed
  • 1 tsp extra-virgin olive oil for massaging the kale
  • 1 pinch kosher salt for massaging the kale
  • 1 large Honeycrisp apple thinly sliced or chopped
  • 1/2 cup pomegranate arils
  • 1/4 cup pepitas (pumpkin seeds) toasted, optional
  • 1/4 cup crumbled goat cheese optional, omit for vegan

Maple-Dijon Vinaigrette

  • 3 tbsp extra-virgin olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp pure maple syrup
  • 1 tsp dijon mustard
  • 1 small clove garlic finely grated or minced
  • 1/4 tsp kosher salt
  • 1/8 tsp black pepper

Instructions

Roast the Butternut Squash

  • Preheat your oven to 425°F (220°C). Line a large sheet pan with parchment paper.
  • Toss the butternut squash cubes with 1 1/2 tablespoons of olive oil, 1/2 teaspoon kosher salt, black pepper, and smoked paprika until evenly coated.
  • Spread the squash in a single layer on the prepared sheet pan, making sure the cubes are not crowded. Roast for 25–30 minutes, flipping once halfway through, until golden and caramelised at the edges. Set aside to cool slightly.

Cook the Farro

  • While the squash roasts, combine the dry farro and vegetable broth in a medium saucepan. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 25–30 minutes, until the farro is tender but still pleasantly chewy.
  • Drain any excess liquid if needed. Spread the farro on a plate or sheet pan and let it cool to room temperature, or at least to warm.

Massage the Kale

  • Place the torn kale leaves into a large mixing bowl. Drizzle with 1 teaspoon of olive oil and a pinch of kosher salt.
  • Using clean hands, massage the kale firmly for 60–90 seconds, working the oil and salt into the leaves, until the kale softens, darkens slightly, and feels silky rather than stiff. This step is essential — do not skip it.

Make the Maple-Dijon Vinaigrette

  • In a small jar or bowl, whisk together the olive oil, apple cider vinegar, maple syrup, dijon mustard, grated garlic, salt, and pepper until fully emulsified. Taste and adjust seasoning — add a touch more maple syrup for sweetness or a splash more vinegar for brightness.

Assemble the Salad

  • Add the cooked farro to the massaged kale in the large bowl. Drizzle about half the vinaigrette over the base and toss gently to combine.
  • Arrange the roasted butternut squash, sliced apple, and pomegranate arils over the top.
  • Drizzle the remaining vinaigrette over the salad. Scatter toasted pepitas and crumbled goat cheese over the top if using.
  • Serve immediately, or let it sit for 10–15 minutes to allow the flavours to meld — it only gets better.

Serve

  • Divide among bowls or serve family-style from the large bowl. This salad works beautifully as a main or a generous side dish alongside roasted chicken, salmon, or soup.

Notes

Storage: Store dressed leftovers in an airtight container in the refrigerator for up to 2 days. For meal prep, store all components separately for up to 3–4 days and assemble to order. The vinaigrette keeps in a sealed jar for up to 1 week — shake well before using.
Make it vegan: Omit the goat cheese or use a plant-based alternative.
Protein add-ons: Grilled chicken, seared salmon, soft-boiled eggs, or crispy chickpeas all work beautifully.
Farro substitute: Cooked quinoa, wild rice, or freekeh can all be swapped in with great results.
Apple swap: Honeycrisp is our top pick for crunch and sweetness. Pink Lady, Fuji, or Braeburn also work well.
