In a medium skillet, heat 2 tablespoons of extra virgin olive oil and 1 tablespoon of unsalted butter. Stir until melted.
Stir 1/4 cup of sliced onion until it browns and gets soft. It should take 20 to 25 minutes. Take it off the heat and set it aside.
Pour 1 cup of water into a large saucepot and bring it to a boil. Add 1 pound of fresh cranberries, 1 1/4 cups of sugar, and 1/3 cup of honey.
Let them simmer for 5 minutes or until all the cranberries are finely popped.
Mix 3 tablespoons Dijon mustard, 2 tablespoons balsamic vinegar, 2 tablespoons finely cracked mustard seed. Cook them for an additional 5 minutes until the juice is thick and glazed over the berries.
Place dressing in a food processor and process until pureed for six minutes. Add 1/4 teaspoon of freshly ground black pepper and 1/2 teaspoon of kosher salt to taste.
