1/2 tablespoon kosher salt 1 teaspoon onion powder 2 teaspoon garlic powder 1 teaspoon paprika 2 teaspoons dried oregano leaves 1/4 teaspoon turmeric 1/4 teaspoon ground black pepper 1/8 teaspoon ground dried ginger 1/4 teaspoon cumin 1/4 teaspoon coriander 1/4 teaspoon cayenne (optional)
Make sure the grates are clean and preheat the smoker to 225 degrees.
Using a clean paper towel, pat dries the chicken legs.
Prepare the dry rub by combining the ingredients in a small bowl.
Ensure that all nooks and crevices of the chicken legs are covered with dry rub.
Close the lid of the smoker and place the chicken legs inside.
In order to reach 160 degrees Fahrenheit, let chicken legs smoke for approximately one hour.
Heat up the smoker to 500 degrees before removing the chicken legs.
Place the chicken back on the smoker and sear it for 1-2 minutes on each side. Rotate until the internal temperature reaches 165 degrees Fahrenheit.
After removing the chicken from the smoker, let it rest for five minutes.
