Pioneer Woman Mexican Cornbread Recipe

This recipe is a Pioneer Woman version of cornbread, but it’s much more than just a comforting dish. It’s made with just a few simple ingredients, and the cornbread is delicious, versatile, and tastes great both hot and cold.

1 cup Yellow cornmeal 1/2 cup All-purpose flour 1 tbsp Baking powder 1 pinch Salt 1 cup Buttermilk 1/2 cup Milk 1 Whole egg 1/2 tsp Baking soda 1 cup Cheddar Cheese grated 1/4 cup Shortening 2 tbsp Butter 1 Red bell pepper finely diced, 1 fresh jalapeno seeded and diced 1/2 onion diced

Preheat the oven to 425 degrees Fahrenheit. Mix cornmeal, flour, salt, and baking powder in a bowl. Mix well.
Add the buttermilk and milk in a cup and add the egg. Combine with a fork. Stir in the baking soda and mix well.
Mix the milk mixture with the dry ingredients. Combine using a fork. Stir in the cheese. Set aside.
Melt 1/4 cup shortening in a small bowl. Add the melted shortening to the batter slowly, stirring until just combined.
Melt the butter in an iron skillet over medium heat. Sauté the peppers and onions until soft, about 4 to 5 minutes.
Transfer the batter to the hot skillet. Ensure that it is evenly spread.
Cook for 1 minute on the stovetop, then bake for about 20 to 25 minutes until golden brown. It should be crispy around the edges when done!
