  • 1 tablespoon Butter
  • 1 medium Yellow onion peeled and diced
  • 1 clove Garlic minced
  • 10.5 oz Cream of chicken soup
  • 1 cup Sour cream
  • 2 cups Mexican cheese blend shredded
  • 1 tablespoon Taco seasoning
  • 3 cups Cooked chicken shredded or chopped
  • 10 oz Rotel tomatoes
  • 4 ounces Green chiles diced
  • 15 oz Canned black beans drained and rinsed
  • 15 oz Canned corn drained
  • 14.5 oz Nacho Cheese Doritos 1 party-size bag
  • 2 tablespoons Fresh parsley finely chopped, for garnish

Instructions
 

Preparation and Cooking

  • Preheat the oven to 350 degrees F. Melt the butter in a medium skillet over medium heat. Stir in the onions and cook for four to five minutes. Stir in the garlic and cook for one minute. Remove from the heat.
  • Combine the soup, cheese, sour cream, and taco seasoning in a large mixing bowl. Mix well.
  • Add the chopped chicken, green chiles, Rotel tomatoes, black beans, onions, corn, and garlic to the mixing bowl. Stir until well combined.
  • Crush the Doritos into medium-sized pieces by hand in a bag. Do not let the pieces become too small.
  • Put half of the crushed Doritos in a 9x13 baking dish, then pour the chicken mixture over it evenly.
  • Put the dish in the oven and bake for about 20 minutes. Remove the casserole from the oven. Top with the remaining Doritos, followed by the cheese.
  • Bake for five more minutes, or until the cheese has melted.
  • Top each serving of casserole with a sour cream dollop and sprinkle with chopped parsley, if desired.
