Ingredients
  

  • 1 Whole turkey (Approx 10-12 pounds)
  • 4 cloves Garlic (minced)
  • 1/2 cup  Olive oil
  • 1/2 cup  White wine
  • 1/2 cup  Chicken stock
  • 1/2 cup  Tomato sauce
  • 1 tablespoon Paprika
  • 1 teaspoon  Dried oregano
  • 1/2 teaspoon  Cumin
  • 1/2 cup  Capers
  • Salt and pepper (to taste)

Instructions
 

  • Preheat the oven to 375°F.
  • Wash turkey, and pat dry. Season inside and out with salt and pepper.
  • Mix garlic, olive oil, wine, stock, sauce, paprika, oregano, cumin, and capers.
  • Coat turkey with mixture. Put on a roasting pan, and cover with foil.
  • Roast for 2 hours. Uncover, and roast for 1 more hour, basting every 20 minutes.
  • Use a meat thermometer, and ensure 165°F internal temperature.
  • Remove, rest for 10 minutes, then carve and serve.
  • Drizzle pan juices over turkey slices before serving.

Notes

  • Being patient is really important: Let the turkey sit in the mix to get all the good flavours.
  • Use enough spices: The nice-smelling spices make the dish taste even better.
