1 Whole turkey (Approx 10-12 pounds) 4 cloves Garlic (minced) 1/2 cup Olive oil 1/2 cup White wine 1/2 cup Chicken stock 1/2 cup Tomato sauce 1 tablespoon Paprika 1 teaspoon Dried oregano 1/2 teaspoon Cumin 1/2 cup Capers Salt and pepper (to taste)
Preheat the oven to 375°F.
Wash turkey, and pat dry. Season inside and out with salt and pepper.
Mix garlic, olive oil, wine, stock, sauce, paprika, oregano, cumin, and capers.
Coat turkey with mixture. Put on a roasting pan, and cover with foil.
Roast for 2 hours. Uncover, and roast for 1 more hour, basting every 20 minutes.
Use a meat thermometer, and ensure 165°F internal temperature.
Remove, rest for 10 minutes, then carve and serve.
Drizzle pan juices over turkey slices before serving.
