Black beans, 30 ounces (or 3 to 4 cups of cooked black beans) 1  cup  White onion (chopped) ½  cup  Celery (chopped) ½  cup  Carrot chopped 2  tablespoons  Vegetable oil ½  cup  Red bell pepper chopped 2  teaspoons  Garlic (minced) 32  ounces  Vegetable broth 1  teaspoon  Salt 1  teaspoon  Ground cumin 1 1/2  teaspoon  Lemon juice 1  tablespoon (with 1 tablespoon of water)  Cornstarch mixed 
Put two tablespoons of vegetable oil in a large pot. 
You can also add carrots, onions, and celery. Add a pinch of salt to the vegetables to help them release water. 
Sauté vegetables until onions become translucent. 
Add the bell pepper and garlic. 
Continue sautéing vegetables until garlic becomes fragrant. 
If you are using canned black beans, rinse them to remove excess starch. 
To the pot, add beans and vegetable broth. 
To the soup, add 1 teaspoon of salt and 1 teaspoon of cumin. 
To heat the soup through, allow it to simmer for about 10 minutes. 
Taste the soup and add more salt if necessary. 
Add the cornstarch and water mixture to the soup. The mixture will thicken the soup. 
Add the lemon juice just before serving.
