Ingredients
  

  • 1 lb Ground Lamb
  • 1 Medium Chopped Onion
  • 2 stalks Chopped Celery
  • 3/4 cup Quick-Cooking Barley
  • 1 can Diced Tomatoes
  • 5 cups Vegetable Broth
  • 2 Garlic Cloves Diced
  • 2 Small Zucchini Diced
  • 1 bag Frozen Mixed Vegetables Peas, Carrots, Beans, Corn, Ten Ounces
  • 1 Bay Leaf Large
  • 1/4 tsp Thyme
  • 1/4 tsp Greek Oregano
  • 1/4 cup Dried Parsley
  • Salt to Taste
  • Pepper to Taste

Instructions
 

  • Pour oil into a large pot. Turn the heat to medium. Stir in celery stalks and chopped onions. Continue stirring occasionally. Cook the lamb until it is brown. Let the fat drain from the pot.
  • The tomatoes should be added now. Garlic, bay leaf, vegetable broth. Allow the ingredients to simmer and broil. Once you see bubbles forming and the broth starts bubbling, stir the pot to ensure the spices are evenly distributed.
  • Combine the barley, zucchini, frozen vegetables, thyme, oregano, and parsley. Cook the ingredients together. Let them simmer for 30 minutes.
  • Depending on your taste, add salt and pepper. Adjust as necessary. You should cook it until you reach the desired consistency and texture. It is best served with pita bread or toasted bread.
