2   pounds   Raw shrimp (peeled and deveined with tails removed)  Vegetable oil (for frying) 1   teaspoon   Fresh ginger (minced)  1   tablespoon   Fresh garlic (minced) 1/2   teaspoon   Red pepper flakes (crushed)  1/2  cup  Soy sauce  1/2  cup   Water  1/2   cup   Brown sugar  2   tablespoons   Rice wine  1/2   cup   Green onions (Sliced)  
Combine shrimp and cornstarch in a sealable bag. 
Warm oil in a wok or skillet over medium-high. 
Stir-fry green onions for 1 min, then set aside. 
Add more if needed, then add shrimp. 
Stir-fry batches until opaque and cooked (5 mins each). 
Sauté garlic, ginger, and red pepper flakes briefly. 
Combine water, soy sauce, rice wine, and brown sugar. 
Stir until sugar is dissolved, then bring to boil. 
Reduce heat, simmer, stirring for 5-6 minutes. 
Cut veggies and mix sauce before cooking. 
Make shrimp pink and tasty. 
Let shrimp soak in the sauce for more flavour.
