1can Black beans (no-salt-added and drained) (15-ounce)

6 large eggs (lightly beaten)

Instructions
In a small bowl, add beans and lime juice and mash with the back of a spoon until almost soft.
heat a large pan on the stove over medium-high heat. Spray the pan with cooking spray.
Add the eggs to the pan. Let them cook without stirring until the bottom sets. Then, use a spatula to gently scrape the bottom of the pan and create curds.
Keep cooking the eggs, stirring occasionally, until they become thickened but still moist. Take the pan off the heat right away.
Heat another pan over medium heat. Spray the pan with cooking spray. Place one tortilla in the pan. Let it heat for about 20 seconds on each side or until it becomes soft.
Take the tortilla out of the pan and keep it warm. Repeat this process with the remaining tortillas.
Now, it's time to assemble the burritos. Take a spoonful of the bean mixture and place about 2 tablespoons onto the centre of each tortilla.
Add around 2 1/2 tablespoons of cooked eggs, 2 tablespoons of Fresh Salsa, and 1 tablespoon of cheese onto each tortilla. Roll up the tortilla tightly to create a burrito.
Spray the pan again with cooking spray. Put the burritos into the pan.
Cook them over medium heat for about 4 minutes or until they turn lightly browned.
Remember to turn the burritos occasionally while cooking. If you like, you can add lime wedges as a garnish. Enjoy your delicious Mexican Breakfast Burritos!
