Instructions
Prep & Sear the Beef
Preheat your oven to 300°F (150°C). Pat the trimmed chuck roast completely dry with paper towels — this is essential for a proper sear.
Mix together the kosher salt, black pepper, garlic powder, onion powder, and smoked paprika in a small bowl. Rub the seasoning blend evenly over all sides of the roast.
Heat the olive oil in a large Dutch oven over medium-high heat until shimmering and nearly smoking. Carefully add the roast and sear, undisturbed, for 4–5 minutes per side until a deep golden-brown crust forms on all sides (including the ends). Transfer the seared roast to a plate and set aside.
Build the Braise
Reduce the heat to medium. Add the chopped onion and celery to the same Dutch oven and sauté for 3–4 minutes, scraping up any browned bits from the bottom of the pot.
Add the minced garlic and tomato paste. Cook, stirring constantly, for 1–2 minutes until the tomato paste darkens slightly and smells fragrant.
Pour in the beef broth, Worcestershire sauce, and apple cider vinegar. Stir well to combine and scrape up any remaining browned bits. Bring to a gentle simmer.
Braise Low & Slow
Nestle the seared chuck roast back into the Dutch oven. Tuck the carrots, parsnips, and baby potatoes around and underneath the roast. Add the rosemary, thyme, and bay leaves.
The braising liquid should come about halfway up the sides of the roast — add a splash more broth if needed. Bring to a gentle simmer on the stovetop, then cover tightly with the lid and transfer to the preheated oven.
Braise for 3 to 3.5 hours, until the beef is fork-tender and beginning to pull apart. About halfway through, carefully open the oven and use a large spoon to skim any rendered fat from the surface of the braising liquid.
Remove the Dutch oven from the oven. Discard the rosemary sprigs, thyme sprigs, and bay leaves. Let the roast rest in the pot for 10 minutes before shredding or slicing.
Finish & Serve
Using two forks, gently pull the beef apart into large, tender chunks. Taste the braising liquid and adjust seasoning with a pinch of salt and pepper if needed.
Spoon the beef, vegetables, and plenty of the rich braising sauce into shallow bowls. Garnish with fresh chopped parsley if desired and serve immediately.
Notes
Storage: Store cooled leftovers with the braising liquid in an airtight container in the refrigerator for up to 4 days. The flavor improves overnight. Freeze for up to 3 months.Fat-skimming shortcut: Refrigerate the finished pot roast overnight. Any fat will solidify on the surface and can be lifted off cleanly with a spoon before reheating — easier and more thorough than skimming during cooking.Slow Cooker: Sear the beef and sauté aromatics first, then transfer everything to a slow cooker and cook on LOW for 8–10 hours or HIGH for 5–6 hours.Instant Pot: Sear using the Sauté function, add all ingredients, pressure cook on HIGH for 65 minutes with a full natural release.Gluten-free: Use a certified gluten-free Worcestershire sauce.
