Ingredients

  • 1.5 lbs 93% lean ground turkey do not use 99% fat-free — too lean
  • 1 large egg beaten
  • 1 tablespoon Worcestershire sauce
  • 3 cloves garlic finely minced
  • 1/4 cup yellow onion very finely diced or grated
  • 2 tablespoons fresh flat-leaf parsley finely chopped
  • 1 teaspoon Dijon mustard
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper freshly ground
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil for oiling the grill grates
  • 4 brioche or whole wheat burger buns toasted
  • 4 slices sharp cheddar or pepper jack cheese optional
  • 1 avocado (sliced)
  • 4 leaves butter or romaine lettuce
  • 1 large tomato sliced
  • Dijon mustard or mayo for spreading, to taste

Instructions

  • In a large bowl, combine the ground turkey, beaten egg, Worcestershire sauce, minced garlic, diced onion, parsley, Dijon mustard, salt, pepper, smoked paprika, and garlic powder.
  • Using your hands, gently fold and mix until just combined — do not overwork the meat. Overmixing leads to dense, tough patties.
  • Divide the mixture into 4 equal portions (about 6 oz each) and gently shape into patties approximately 3/4 inch thick. Press a shallow thumbprint dimple into the center of each patty to prevent puffing.
  • Place patties on a parchment-lined plate, cover with plastic wrap, and refrigerate for at least 20–30 minutes. This step is critical for patties that hold together on the grill.
  • Preheat your gas or charcoal grill to medium-high heat, approximately 375–400°F.
  • Clean the grill grates thoroughly with a grill brush, then fold a paper towel, dip it in olive oil, and use tongs to wipe the grates until well-oiled. This prevents sticking.
  • Remove patties from the refrigerator and place directly on the oiled grill grates. Do not press down on the patties — this squeezes out juices.
  • Grill for 5–6 minutes on the first side without moving them. The patty will naturally release from the grate when a crust has formed and it's ready to flip.
  • Flip the patties and grill for another 4–5 minutes on the second side.
  • If adding cheese, place a slice on each patty in the last 1–2 minutes of cooking and close the grill lid to melt.
  • Use an instant-read thermometer to verify the internal temperature has reached 165°F. This is the USDA safe minimum for ground turkey — do not skip this step.
  • Remove patties from the grill and let them rest for 2–3 minutes before assembling.
  • While the patties rest, place buns cut-side down on the grill for 30–60 seconds until lightly toasted.
  • Spread your preferred condiments on the buns. Layer with lettuce, a turkey patty, tomato slices, and avocado. Serve immediately and enjoy.

Notes

MOISTURE TIP: Grating the onion on a box grater instead of dicing releases more juice into the patty, boosting moisture significantly. STORAGE: Cooked patties keep in an airtight container in the refrigerator for up to 4 days. Reheat gently in a skillet over medium-low heat with a splash of chicken broth to prevent drying out. FREEZING: Raw formed patties freeze well for up to 3 months. Separate with parchment paper in a zip-lock freezer bag. Cook from frozen, adding 3–4 extra minutes per side. STOVETOP METHOD: Heat a cast iron skillet over medium-high heat with 1 tablespoon of avocado oil. Cook 5–6 minutes per side, covering the skillet for the last 2 minutes to help reach temperature. NO PEEKING: Resist lifting the patties prematurely — they need time to build a crust that holds them together.
