Ingredients
  

For The Pie Pastry:

  • 100 g Butter
  • 200 Plain flour
  • 2 tablespoon caster sugar
  • Egg

For The Filling:

  • Lemon curd

For The Meringue:

  • 6 egg whites
  • 300 g caster sugar

Instructions
 

For the Pastry:

  • Place flour in a bowl. Add butter and rub until crumbly.
  • Mix in egg and water, knead until smooth. Chill for 30 minutes.

For the Tart:

  • Grease tart tins. Roll out pastry, line tins, chill, and blind bake for 20 minutes, then cool.
  • Fill with lemon curd.

For the Meringue:

  • Heat sugar in the oven for 5 minutes.
  • Whip egg whites until stiff. Add hot sugar, whip, and pipe over the tart.
  • Use a blowtorch to add colour.

Notes

  • Use fresh lemon juice for a zesty flavour.
  • Make sure to pre-bake the pie crust.
  • Whip meringue to stiff peaks for a beautiful finish.
