Instructions
Sear the Beef
Pat the sirloin tips completely dry with paper towels — this is key for a good sear. Season generously all over with salt, pepper, and smoked paprika.
Heat 1 tablespoon of olive oil in a large skillet (cast iron or stainless steel preferred) over medium-high heat until shimmering. Add the beef in a single layer — work in two batches to avoid crowding. Sear for 2 minutes without moving, then flip and sear another 60-90 seconds. The beef should be browned on the outside and just slightly pink inside. Transfer to a plate and tent loosely with foil.
Cook the Mushrooms & Aromatics
In the same skillet, add the remaining tablespoon of olive oil over medium-high heat. Add the sliced mushrooms in a single layer. Do not stir for 2-3 minutes — let them brown undisturbed. Stir, then cook another 2 minutes until deeply golden and reduced.
Add the diced onion to the mushrooms and cook, stirring occasionally, for 3-4 minutes until softened and translucent. Add the garlic and cook, stirring constantly, for 60 seconds until fragrant.
Sprinkle the flour over the mushroom and onion mixture and stir well to coat. Cook for 1 minute to eliminate the raw flour taste.
Build the Sauce
Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir well, scraping up any browned bits from the bottom of the pan — that fond is pure flavor. Bring to a gentle simmer and cook for 3-4 minutes, stirring occasionally, until the sauce thickens slightly.
Reduce heat to low. Temper the Greek yogurt: spoon 2-3 tablespoons of the hot broth from the pan into the Greek yogurt and stir briskly to warm it. Slowly stir the tempered yogurt back into the skillet. Do not boil. Stir until the sauce is smooth, creamy, and glossy.
Finish & Serve
Return the seared beef and any accumulated juices back to the skillet. Stir gently to combine and coat the beef in the sauce. Taste and adjust seasoning with salt and pepper as needed. If the sauce is too thick, add a splash of beef broth to loosen.
Serve immediately over cooked whole-wheat egg noodles, brown rice, or cauliflower rice. Garnish generously with fresh chopped parsley and an extra crack of black pepper.
Notes
STORAGE: Store the beef and mushroom mixture separately from noodles/rice in airtight containers in the refrigerator for up to 4 days. Reheat gently over low heat with a splash of broth. Do not freeze — the yogurt sauce does not reheat well from frozen.GREEK YOGURT TIP: Always use full-fat Greek yogurt at room temperature. Tempering it before adding to the hot pan is essential to prevent curdling.GLUTEN-FREE: Substitute cornstarch for flour and use certified GF tamari instead of Worcestershire sauce.MEAL PREP: This recipe doubles easily. Make a big batch on Sunday for lunches and dinners throughout the week.
