- 2 tablespoon tellicherry peppercorns
- 3 tablespoon mustard seeds
- 2 tablespoon coriander seeds
- 2 tablespoon pepper flakes
- 2 tablespoon ground allspice berries
- 1 tablespoon ground mace
- 2 medium cinnamon sticks (cover with a towel and use a hammer to break them into small pieces)
- 4 medium bay leaves (crushed with hand)
- 2 tablespoon whole cloves (smack them with the flat end of a kitchen knife to break them up)
- 1 tablespoon ground ginger
Using a mortar and pestle, crush peppercorns, mustard seeds, and coriander seeds.
Stir the ground seeds into a pan and heat over medium heat for about 3 to 5 minutes until fragrant.
Let them cool. Add all the other spices, then store them in a sealed container for later use.
When you're ready to use it, simply rub the spice mix all over your corned beef before cooking.
