For The Simple Syrup: 1/2 cup Granulated sugar 1/2 cup Water 1 pinch Kosher salt For The Coconut Mojito: 1 oz Simple syrup 1-1/2 oz White rum 1 oz Full-fat canned coconut milk 1 oz Fresh lime juice Club soda for serving 8 mint leaves for serving Ice

Stir the sugar and water together in a small saucepan over medium-high heat until the sugar dissolves.
Take off the heat, cool, and place in an airtight container.
For The Coconut Mojito: Muddle the mint leaves and simple syrup in a cocktail shaker.
Pour rum, coconut milk, lime juice, and ice into a shaker halfway full of ice.
Cover the drink and shake it for 20 to 30 seconds to get the drink very cold.
Place ice into a tall glass and strain the cocktail into it. Garnish with club soda and mint leaves.
