In this mac and cheese recipe, I whisk together three ingredients: butter, flour, and milk. It won’t take many adjustments for a home cook to make. This is a great dish to bring to potlucks or serve alongside other dishes at your family cookout!
Preheat the oven to 350°F. Prepare penne according to package directions, but cook it for two minutes less than the package directions. Place in cold water to rinse and set aside.
Melt butter over medium heat in a heavy-bottomed saucepan. Then whisk in the flour. Cook for 2 minutes while whisking. While whisking, slowly add milk. Cook until sauce thickens, stirring frequently, about 10 minutes. Then remove it from the heat.
Add 1-3/4 cups Flagship cheese, 1/4 cup Just Jack cheese, salt, and 1/4 tsp chili powder and garlic powder. Mix well until cheese is melted and ingredients are incorporated about 3 minutes.
In a large bowl, combine pasta with sauce and mix well. Place in an 8-inch baking dish. Lastly, sprinkle with the remaining chili powder and cheese.
Bake for 20 minutes, uncovered. Before serving, let Mac & Cheese sit for 5 minutes.
