In a large bowl, combine the baking powder, kosher salt, garlic powder, onion powder, smoked paprika, black pepper, and cayenne (if using). Toss the dried wings in the spice mixture until every piece is evenly and thoroughly coated.

Preheat your air fryer to 380°F for 3-5 minutes.

Transfer the cooked wings to the bowl with the sauce and toss to coat thoroughly. For extra-sticky, lacquered wings, return the sauced wings to the air fryer at 400°F for 2-3 minutes to set the glaze.
